A member of the beet family, chard is a leafy vegetable with stems that vary in color. It has a slightly bitter flavor and is best served sautéed or raw in a salad. It is also one of the most antioxidant rich foods, containing beta-carotene, vitamins E and C and many other disease fighting antioxidants.
Keep rainbow chard refrigerated in an airtight plastic bag, unwashed and away from liquids. It should stay fresh for up to five days.
Rinse rainbow chard in cold water, removing parts that have wilted or have holes. Slice the leaves 1-inch wide and stems a 1/2-inch.
Rainbow chard adds color to soups, salads, and pasta dishes. Boil or sauté for side dishes, or use raw, hearty leaves for wraps.
When raw, rainbow chard tastes bitter, tangy, and sometimes salty. Heat for a sweeter, nutty taste.
