How Is Kale Different From Lettuce?

Supersized nutritional value elevates kale past traditional lettuce

For all of its nutritional firepower, kale remains a relatively little-known vegetable for many people. Its leafy appearance often leads people to mistakenly place it in the same category as lettuce, but nothing could be further from the truth. In fact, kale and lettuce are members of completely different plant families.

Kale features a thicker stem and usually delivers a strong, earthy taste that is not spicy. It is a member of the same plant family as broccoli and cauliflower. Lettuce has longer leaves that are juicier and sweeter in taste than kale, with a stem that can be bitter. Cal-Organic Farms® offers multiple varieties and cuts of kale including green kale, lacinato kale, and a kale/carrots blend.

Kale and lettuce are both packed with vitamins and minerals, but there are vast differences in nutrient content. This is where kale comes out ahead. Kale contains several times the amounts of vitamins C, B2, B6, K, A and E compared to lettuce, with similar superiority in minerals including calcium, manganese, iron, potassium, phosphorus, magnesium and copper. Kale also contains more protein, while lettuce has a lower net carb content and fewer calories.

How does lacinato kale compare to regular green kale?

Lacinato kale originated in Italy and is often referred to as Tuscan kale or black cabbage. It features a darker green color, narrower leaves and a sweeter taste than its green kale cousin. Lacinato kale’s bumpy skin contributes to another nickname of dinosaur kale.

Lacinato kale is the favored variety for many people when it comes to use in sandwiches and salads, and it is delicious raw or cooked. You can also bake lacinato kale into crispy kale chips. A suggestion to minimize the somewhat bitter taste of regular green kale is to cut it finely and add a dash of salt or salty flavor, such as parmesan cheese.
