Cal-Organic Farms® offers a variety of these tasty veggies
Despite the somewhat obscure collective name, you likely are familiar with many of the brassica vegetables offered by Cal-Organic Farms® and the great variety of tastes and textures they deliver. This is a good opportunity to learn more about your favorites and discover some new choices.
Bok Choy – A member of the cabbage family, bok choy is a versatile vegetable that features a crisp, crunchy base with delicate, dark green leaves on top. Its mild, subtly sweet flavor is popular in stir-fry dishes, salads, warm noodle bowls, and even roasted as a standalone side dish. Bok choy is rich in vitamins A and C, calcium and other minerals.
Baby Bok Choy – As its name implies, baby bok choy is smaller than regular bok choy and features a milder flavor. You can chop the stems and leaves for use in stir fries and other Asian dishes, and the leaves are great in salads. Baby bok choy can be split and grilled, or broiled as an eye-catching side dish.
Broccoli – The crunchy stalk and tiny leaflets contain an array of vitamins and minerals, making broccoli one of the most nutritious members of the brassica family. Broccoli is popular in stir fries, as a standalone side dish either boiled or grilled, and is great with dips on a veggie tray.
Sweet Baby Broccoli – This broccoli version delivers a mild, slightly nutty flavor. It is smaller and sweeter than traditional broccoli, and its crisp texture is ideal for roasting, sautéing, or enjoying uncooked as an appetizer or part of a veggie tray.
Cauliflower – This crunchy, white vegetable is known for its compact head and a mild, slightly nutty flavor. A popular ingredient in vegetable medleys and veggie trays, cauliflower is packed with nutrients, contains very few calories and little fat, and no cholesterol.
Green Cabbage – This leafy vegetable often serves as the main ingredient in coleslaw since it has sufficient structure to withstand mayonnaise without getting soggy. Cabbage also is common in soups, stir fries, or as an ingredient in stews or cooked with meats. It is high in dietary fiber and includes a variety of nutrients including vitamins and antioxidants.
Red Cabbage – Add a little color to your coleslaw or side dishes with the red variety of this crunchy vegetable. Like its green cousin, red cabbage is high in dietary fiber content as well as antioxidants, vitamins, calcium and other nutrients.
