Full size and fully mature, our organic rainbow fingerling potatoes come in purple, gold and red varieties shaped like small, stubby fingers—hence the name! Because of their size, fingerlings are often cut in half and roasted, then served as a side dish.
Keep your potatoes in a cool, dark place for the best and longest storage possible. Warm temperatures and light both can have adverse effects on potatoes. The optimum temperature for storing potatoes is between 45-55 degrees F. Storing potatoes in a refrigerator is not a good option because it allows the starches to break down into sugars, which may change the flavor. If you must refrigerate them, try to use them within a few weeks to avoid this issue and enjoy the best possible flavor.
